As we mentioned earlier, all that is needed for smoking is a fire, !SmokingLicious Gourmet Wood Chunks and a food item to smoke.

However, there are a few items that we use to cook safer and make cleanup easier.

For food safety, we highly recommend that you use a meat thermometer to ensure cooking until the correct internal temperature is reached (as recommended by the USDA Food and Safety Inspection Service) in order to ensure it is safe for consumption (veal, lamb and beef to 145-170 degrees, pork to 160-170 degrees, whole chicken and turkey to 180 degrees and chicken pieces to 170 degrees).

The most beneficial accessory to smoking foods is a smoking box. It is specifically designed to hold the wet chips in a box to confine them for easy cleanup. However, you can create the same “easy clean up” method of smoking by placing your wet chips in aluminum foil. Fold the foil to seal and poke several holes on one side only. Place the package on top of the fire (hole side facing upward), under the cooking grate.

TIP: a little goes a long way. Remember, you are smoking your foods – not the neighborhood. That is, unless you want the whole neighborhood showing up to feast upon your delicacies!
